Spinach Stuffed Shells.........



Spinach Stuffed Shells Recipe

12 jumbo shells, cooked according to the package directions

1 pound spinach, steamed and squeezed dry

12 oz ricotta cheese

1/2 cup grated parmesan, divided

1 egg, beaten slightly

2 cups spaghetti sauce




Pour the spaghetti sauce in bottom of a 9 x 13 pan.

Mix the spinach, ricotta cheese, 1/4 cup parmesan, and egg together.

Place 1 -2 T of cheese mixture in each shell and put stuffed shell in the pan.

Sprinkle remaining parmesan over the top. Cover with foil. Bake at 350 for 25 - 30 minutes.


You can use frozen spinach. Just thaw and squeeze as dry as possible.


Uncover the pan during the last 5 - 10 minutes of baking.

I am doing a "pantry-challenge" trying to prepare meals using what I currently have on hand.
Which accounts for all the pasta/Tomato/Chicken dishes.... I am going to have to break down and get to the market and pick-up some canned goods which are on sale.

oh wow! This looks so good that I can almost smell it.
In the winter months I don't like to go out to the store as much and I too try to use what I have on hand. This is an excellent idea. Thank you for sharing it.

Thanks Deb~~ I am doing a pantry challenge with my dear friends @ Prairehomemaker. I always like to have every possible canned tomato on hand I just use it in so many recipes. Soups, Stew, Casseroles, Spaghetti sauce, Salsa....

Oh! That looks yummy! And with my attempt to move more toward a vegetarian diet this year (maybe not 100% vegetarian), this would be a good dish to serve.

Several of my cousins do not eat meal , although they do, do dairy. And this is a dish that they love.

Kristi, LOL......I just got back from the market with 24 cans of 28 oz Cans of diced tomato. I was so excited. Swapping recipes in the produce area with the seniors that came to shop this afternoon.
If you are a fan of tomato/garlic you will enjoy this.

GG, this looks absolutely wonderful! I wonder if Dreamfields makes shells like that. If so, this is sooooo on my menu soon. Even if they don't, it still might be on the menu soon. lol
