Today I am making Corn Chowder..........I have been promising my Family for over a week. I have several different recipes I use for this . But this is my Grandma Ella's Original recipe this is my Favorite.
Corn Chowder
4 tablespoons Butter
2 Small Onions 4
4 Large Potato's
6 Cups Chciken Stock
4 cups of Corn, fresh ,frozen or canned
2 pints of cream , milk or half & half
Salt and Pepper to taste, If I have fresh chives I add them on the top with a few slices of bacon well done and crumbled. This is basic but yummy!!!!
Serves about 10-12 .
Melt butter in soup kettle and saute onion until limp. Add potatoes & Chicken Stock to kettle, season with salt and pepper, and bring to a boil. Simmer over medium heat until potatoes are tender, about 30-40 minutes. Add corn and cream.Heat, stirring frequently, for ten minutes.
